The best bánh xèo in San Jose would be at Pho 909 in Milpitas. Second best would be at my sister-in-law’s Hannah. Then this one. Watch out for the coconut milk. You might want to sub it with milk.
- 1 goi bot Bánh Xèo ( I use the Three Elephant brand)
- 3 cups water
- 1 can coconut milk
- 1 tsp chicken bouillon
- Green onions, cut up
Mix together 2 hours before cooking
Filling:
- Yellow mung beans, cooked
- Bean sprouts
- 1 lb thịt ba rọi
- 1/2 lb shrimp (small-sized, since the shell is softer)
- Onions
1. Heat 1 Tbsp oil in fry pan.
2. Add pancake mixture and swirl to cover pan.
3. Add filling.
4. When edge is brown and crispy, add bean sprouts. Add 1 tsp oil around the edge to make it crispy.
Serve with lettuce, rau cải đắng, rau thơm, nước mắm.
