Dao’s Vanilla Pound Cake

This is my sister Dao’s recipes. She aspires to be a chef and is the one who talked me into buying that colossal KitchenAid mixer. Her pound cakes are the best. Sometimes, she swirls cholocate batter into the vanilla batter. Don’t think of calories when you eat it.

  • 8 oz. margarine
  • 4 oz. Butter
  • 3 cups sugar
  • 1 ½ tsp. pure vanilla extract
  • 5 large eggs
  • 3 ½ cups sifted cake flour
  • ½ teaspoon baking powder
  • 1 cup milk

Cream margarine, butter and sugar until very light and fluffy (at least 15 minutes in a kitchen aid mixer). Scrape the bowl with a rubber spatula and add the vanilla.

Add eggs one at a time and blend thoroughly.

Mix the flour and baking powder in a separate bowl and add to mixer alternately with the milk.

Bake in a loaf pan about 1 hour in preheated 340° oven
