Sue’s Prime Rib


This recipe comes from my sister-in-law in San Diego. She loves entertaining, but only goes for the super easy recipes, the kinds that require 2 ingredients or less … Don’t underestimate the recipe. Yes, it looks simple, but the rib is excellent. The two ends will be well-done. And the center cut is juicy.


Ingredients:

  • Buy the no bone prime rib at CostCo. Get the one in the ugly-looking package. Size does not matter. Really! :mrgreen:
  • Salt and pepper
  • Herbes de Provence (thyme, basil, …)
  • garlic cloves
  • Directions:

  • The night before, marinade the meat with garlic, Herbes de Provence, thyme, rosemary. I use the blender to mix all the spices.
  • In the morning, leave the meat out to thaw to room temperature. Season with salt. Cover lightly with foil (make a tent).
  • Preheat oven to 375. Cook for 1 hour.
  • Turn off oven after 1 hour of cooking. Do not open oven door. Absolutely no peeking !!! Just trust it will cook.
  • Leave meat untouched, un-peeked, in the oven till 35 minutes before serving time. Then turn oven on at 375 again.
  • Cook meat for another 35 minutes for Medium Rare, or 1 hour for Medium. Remove the roast from the overn let it rest for 15 minutes before cutting.
