Easy Almond Float

I used to make this dessert back when we were living in San Diego. It’s refreshing, easy to make, and a hit to all ages at parties.

Get this packet of gelatin mix from any Asian market. It’s about $1.00 a packet.

For Fruit Mix, use any or all of the following:

  • canned fruit cocktails
  • canned mandarin orange
  • canned lychees
  • canned longans
  • frozen coconut juice with meat
  • Empty contents of this packet in 3 cups water, bring to a boil while stirring.
    Pour into a mold or shallow container and cool until set.
    Cut the cream into bite-sized cubes.
    Place in a serving bowl with fruit salad and gently mix them up.

    I like using the juice from lychees/longans/coconut juice, and place the fruit cans in the fridge beforehand to keep them cold.
