A simple and quick recipe. From start to end, it took an entire 30 minutes, and that includes making the side dish. Not kidding … Now see if you can race to the kitchen and make the main and side dishes in less time :)
Preheat oven to 450 deg.
1 package of pork tenderloin (there are 2 pieces in the package). Rub the meat with salt, pepper, thyme and whatever spices you have. Add 2 T olive oil. Time to bake is 25 minutes. Do not overbake pork, unless you like eating cardboard :)
While meat is cooking, make the sauce.
Heat 1 T olive oil in saucepan. Add cut up onions and lightly caramelize. Add skinned and cut up apples (Golden Delicious is best, but any kind is good), 1/2 c of raisins, 2 T maple syrup (can sub with 1 T brown sugar), pinch of salt, 1/2 cup of water o broth. Let all simmer for 15 minutes, until the sauce is thickened.
Turn off the heat. Add juice of 1 lemon (or lime, or orange, whatever you have on hand …)
While waiting for the meat to still cook, make asparagus. I should ask Tina to write this part, since it’s her dish.
After exactly 25 minutes of baking, take out the meat and let it sit for 5 minutes. Layer the apple sauce on top. And that’s it.
