I learned making yaourt since I was a little girl. I remember Mom telling me yaourt is very picky. It would not set if the person making it is at that time of the month. This of course doesn’t apply to men, since men don’t cook in Vietnam. Does that make any sense? The setting of the yogurt, not that men don’t cook…
I still believe it though … yogurt not setting, and men don’t and can’t cook :)
The original recipe is rather simple if you simply want to stay original. Just remember the ratio of 1:3. One can of condensed milk, 3 cans of water. But now that I’m more careful with my sugar intake, I’ve revised mine to be:
Boil water. Take it off the stove when you hear water rolling.
1/2 can condensed milk, mixed with 1 3/4 can of hot water
1 c yogurt mixed with 1 1/4 can of cold milk
Add the condensed mixture to the yogurt mixture. Stir to mix. You want the mixture to be lukewarm, thus the mixing of hot and cold liquids. Too cold, the bacteria don’t grow. Too hot, and they’re dead.
Divide up into 6 cups and place these in a deep pot. Pour hot water to the yogurt level. Cover the pot. Let the yogurt sit overnight. Refrigerate them the next day.
